My husband and I are religious nigh engagement night. With 5 kids it'south honestly a necessity so you don't become passing ships in the night. It takes and so much energy to keep them live, fed, and happy. Sometimes we have date night planned out and sometimes we jump in the car and figure it out from there. Really, it doesn't matter where nosotros go…we're only happy to exist out together.

On our most recent date night we had plans that fell through but were already headed Northward so nosotros decided to go to a Mexican eating place that we've been hearing about for a while. The restaurant ended upwardly existence a longer drive than anticipated. Almost an hr.

These Mushroom, Spinach, and Craven Enchiladas are flossy enchiladas topped with a cilantro sour cream sauce. This Mexican chicken recipe is visitor worthy.

Filling:

  • 2 tablespoons unsalted butter
  • 1 small onion , minced
  • 2 garlic cloves , minced
  • 16 ounces mushrooms , chopped coarsely
  • 1/iv cup low-sodium chicken broth
  • 9 ounces fresh spinach , washed, tuckered and coarsely chopped
  • 4 ounces cream cheese , softened
  • 2 cups cooked chicken , shredded or cubed

Sauce:

  • 1 tablespoon lime juice (more to taste)
  • 3/4 cup low-sodium chicken goop
  • 1 teaspoon garlic powder
  • 1 cup sour cream
  • 1/2 cup cilantro , finely chopped

Other:

  • viii flour tortillas
  • i 1/two cups Monterey jack cheese , shredded
  1. Preheat oven to 350 degrees and grease a 9x13 baking dish.

  2. For the filling: Melt the butter in a big skillet over medium heat and saute onions, garlic and mushrooms until soft and liquid has evaporated, about 5 to 7 minutes.

  3. Remove one-half of the mushroom mixture and fix aside for the sauce.

  4. Add the chicken broth and cook for ii more minutes.

  5. Add the spinach and cook until spinach has wilted and cooked down. Stir in the cream cheese until melted. Season with table salt as needed. Stir in the chicken.

  6. For the Sauce: In a small sauce pan combine lime juice, chicken broth, and garlic powder. Add together the reserved mushroom mixture, sour cream and cilantro. Reduce heat to simmer until sauce just begins to thicken. Add salt to sense of taste.

  7. Divide filling evenly amongst the viii tortillas, fill and ringlet and place them seam side down in the prepared pan.

  8. Pour sauce over enchiladas, top with shredded cheese and bake x-fifteen minutes or until information technology's nice and bubbly.
